Chicken Zoodle Soup
Our take on the hearty chicken soup! The classic chicken soup is made even better and healthier by replacing pasta with zoodles. A must-try!

Ingredients
- 2tbsp olive oil
- 1/2 white onionchopped
- 1 carrotmedium, chopped
- 1stalk celerychopped
- 1tbsp dried oregano
- 1quart chicken broth
- 8oz chicken thighsboneless
- 1 zucchinilarge
- 1/4cup sour cream
Instructions

In a soup pot, heat olive oil over medium heat and cook onion and cook until translucent.

Add carrots and celery and season with salt, pepper and oregano. Cook until softened slightly.

Add the chicken broth and bring the mixture to a boil. Then lower the heat to a simmer, add chicken and cook 30 minutes.

Remove the chicken thighs and shred them. Cook them for 15 more minutes.

Spiralize the zucchini into thin noodles and add them to the soup during the last 2 or 3 minutes of cooking. Enjoy the soup with sour cream!
