Rest

They forgot to let the loaf rest after baking. The loaf was super soggy and wet inside. A bread loaf that size needs to rest around 90 minutes before packaging and delivering to the customer. The bagels were awesome. The flavor and texture was great. The rolls were very good as well. I bet the loaf would of been good as well if they would of been patient and remembered to let the loaf rest before wrapping it up and blocking all the water inside.
